Slow cooked Teriyaki Chicken Thighs

Hopefully I'll get back into the swing of things and blog a little bit more frequently...I have a couple recipes waiting to be posted...here is one of them!


This is something that I dreamed up today, I had some chicken thighs that I was going to fry up and have fried chicken and mashed potatoes. But as I was busy doing what seemed like a never ending supply of dishes (as many of you know I recently fell into all kinds of new kitchen supplies...they were gifts from my wedding!! so I've slowly been washing our new items) I thought about all of the dishes I would dirty making fried chicken.


I started to think about how I could decrease the number of dishes I dirtied and decided I could either marinate the thighs and BBQ them, or I could throw them in the crock pot. Because I felt adventurous, and because it seems every time I try to marinate, I run out of time for the marinade to actually sink into the meat so that the meat only has the essence of marinade...I am really making run-on sentences here...


So anyway, here we go:


Slow Cooked Teriyaki Chicken Thighs
Ingredients:
-4-6 thawed chicken thighs (or 2-4 pounds of boneless skinless chicken breasts)
-1 c. Yoshida's teriyaki marinade
-1/4 c. Seasoned rice vinegar
-3/4 c. water
-1 clove of garlic, minced
-1/4 tsp. pepper
-4 carrots cut as desired.

1. Place ingredients in the crock pot. Stir.
2. Heat on high for 3 hours. Or low for 4-6 hours. Or until chicken is no longer pink and is cooked through.
3. Serve with rice.


(I'll let you know how this one turns out. It is currently still in the crock pot for dinner tonight!! I can't wait to use my new rice cooker to make the rice, it is soooo scrumptious and EASY to use!! I love rice! :D)
